Thai Pizza with Mushrooms

It’s pizza time again!  I came up with this Thai Pizza one night when I had a fridge full of leftovers from a recent Asian Lettuce Cup party.  It’s how I love to create new pizzas…”What’s in the fridge?  Throw it on one of the pizzas I’m making!”  This one turned out particularly delish – the fresh toppings you add after the pizza is cooked contrast beautifully with the hot, peanut-sauce covered pizza.

The dough is my still current favourite recipe for cold fermented pizza dough from Serious Eats, but I also love getting pizza dough from my local Italian grocery store in a pinch.  Roll out a ball of the dough as thin as you like it and place it on a pizza peel sprinkled liberally with corn meal.

Top the pizza dough with your favourite peanut sauce.  I’ve found that this recipe will work with almost any peanut sauce I have kicking around the fridge, but if you’re looking for a quick and simple one to make,  mix together:

– 3 heaping tablespoons of Peanut Butter (I like to use crunchy)

– About a third of a cup of Coconut Milk

– a tablespoon of Soy Sauce

You can also add some rice vinegar and/or hot sauce based on what you like.  Now slice up about 4-6 mushrooms (I used the small brown ones here) and sprinkle them evenly on top of the pizza.

Now top with some grated mozzarella (or leave this off if you want a vegan pizza) and you’re ready to bake.

Bake the pizza on a preheated pizza stone for 10-15 minutes at 550 degrees, turning the pizza occasionally so that it cooks evenly.  You want it to be golden and bubbly.

Time for the toppings!  I topped my pizza with some beansprouts, matchstick carrots, sliced chiles and cilantro.  Feel free to play around with the herbs too…fresh mint and basil and also fantastic here.

Slice it up and serve with lime wedges and some hot sauce…I love Sriracha here!

Always remember to play with your pizza!  It’s one of the best places to try out different flavour combinations.  Who knows what masterpiece you’ll create?
