Peanut Sauce Noodles with Veggies – Vegan & Gluten-Free

I created this dish when I had a crazy head cold and needed something fast, easy and satisfying.  It’s basically a one pot meal, but the various ingredients are added at different times, so that they’re all done (and not overcooked) at the same time.

This recipe uses the same type of noodles as Pad Thai.  I’m still trying unsuccessfully to perfect my Pad Thai recipe (I think that I like to fiddle too much), but these peanut noodles are the perfect way to use up the extra rice noodles.

Peanut Sauce Noodles with Veggies - The Noodles

This recipe utilizes any veggies that you happen to have in your fridge.  For this version, I use a carrot, a handful of green beans, some broccoli, about 1 quarter of a cauliflower and some bean sprouts.

To start, in a medium pot, combine:

– 2 cups broth, stock or water (you will also need an extra cup while cooking)

– ½ cup coconut milk

– ½ cup peanut butter

– Siracha (to taste)

– 2 tablespoons of rice vinegar

– 1 tablespoon of soy sauce

While the sauce is heating up, chop the veggies into somewhat equal sized pieces.  Once the sauce is simmering, add the chopped carrot and 1/4 of a pound (1/4 of a package) of the rice noodles.

Simmer for 5 minutes and then add the harder veggies (the cauliflower and green beans.)  Add some extra liquid whenever you see that the noodles have started absorbing it.

Cook for another 10 minutes (adding more liquid when necessary) and then add the broccoli.

Peanut Sauce Noodles with Veggies - Add Lime  

Cook 5 minutes and then give it a good squeeze of lime.  Add the beansprouts (you can also add some baby spinach, if you have some kicking around.) and give it a good stir.

Give it a taste and add more lime or soy sauce, depending on how you like your noodles.

Ready to eat!  I love this served with a wedge of lime and garnished with some fresh herbs – cilantro and basil are great here, but parsley adds a nice touch too.  Enjoy!
